Baked Root Vegetables
The side dish that goes with just about anything.
• 250g celeriac
• 250g sweet potato
• 250g potato
• 100g carrot
• 1 medium onion
• 3 tbs Olive oil, (the more flavorful the better)
• 1 ½ tsp Salt
• 1 tsp Pepper
• 1 tsp Red pepper flakes
• 1 tsp Paprika
• 1 tsp garlic powder
Tip: You swap out and mix in any type of root vegetables.
Preheat the oven to 200°C.
Peel and cut the root vegetables into cubes about 1-1,5 cm. You can make them bigger but then they take a little longer to bake. Peel the onion, cut it into quarters and separate some of the layers. Spread the vegetables onto a baking tray. Sprinkle on the olive oil and mix them around to coat the oil on everything. Sprinkle on the spices and the tray in the oven.
Bake for 15 min, take the tray out, stir the pieces around, but back and bake for another 15 min. Taste the potatoes to see if they are cooked through.
Cut the vegetables into approximately the same size. This will make sure they all cook through at the same time.
Make sure the oil and the spices are mixed well so they coat all the vegetables.
