Baked fish with dill
I fell in love with this dish because it is mostly done in the oven so I won’t get any fishy smell in my apartment. And it is delicious.

Ingredients

• 1 tbsp olive oil
• 600 g white firm fish filet (with or without skin)
• 2 ts lemon zest
• Fresh dill, finely chopped
• 4 tbs panko breadcrumbs
• 2 cloves garlic, finely chopped
• 2 tbs olive oil
• ½ tsp Salt
• ½ tsp Pepper
Directions
Preheat the oven to 200°C
Mix the finely chopped dill, garlic, olive oil, salt, pepper and panko breadcrumbs together in a bowl.
Cut the fish in 2 pieces and pat it dry with paper towels. If the filet has skin; place it skin side down on a baking sheet with parchment paper. Spread the breadcrumbs and herb mix over the fish and press to make it stick. If the fillet does not have skin; bread it on both sides.
Bake the fish for 10 min, or until the breading is golden and the fish is cooked through.
Goes well with Baked Root Vegetables and a salad.
